At the end of 2018, the construction of the research brewery began at the Institute of Electrochemistry on around 100 square meters, where beer and brewing have been the focus of research ever since. Even with a centuries-old drink, there is still a lot to research, be it new process technologies or the influence of different ingredients on the end product. In the winter semester 2021/2022, the chemistry of brewing will make its way into teaching. Four different courses will give students an insight into the science behind beer. On our website, we give you an overview of the brewery and the topics that are researched here.
The beer from our brewery is marketed under the "TU Craft" brand in line with "TU Clausthal" and the university magazine "TU Contact". In the craft brewery, "craft" simply stands for the English translation of "handicraft", which is intended to differentiate it from the industrial processes in large breweries. Craft beer is therefore generally produced by hand in smaller breweries, sometimes very creatively, which is why the terms "creative brewing" or "strength beer" are sometimes used.
The so-called Purity Law of April 23, 1516 only allows the ingredients water, barley and hops to be used in beer production; yeast was not yet known at the time, but was included in later versions of the Purity Law. Beer production in Germany is legally regulated in the provisional Beer Act of 1993. As we only brew with water, malt, hops and various yeasts, apart from special requests, which in turn are subject to food law, our beers comply with the Purity Law - even if we do not explicitly state this. Furthermore, our beers are unfiltered and unpasteurized. As a rule, we use well-settling yeasts so that we can also offer our beer lovers clear beers after a certain maturation period.
